The history of the hamburger



Hamburgers started life as Hamburg steak, an invention that immigrants from the city of Hamburg in Germany brought with them when they arrived in New York, and other big cities in the USA.


They didn’t use bread to surround the steak, and it was rather more expensive than other items on the menu. The earliest recorded mention in the USA, is a menu from Delmonico’s Restaurant in the 1800s. There was a plate of Hamburg steak priced at 11 cents listed.

It’s not clear what year the hamburger first came into being, but most food historians agree that it was between 1885 and 1904. Lots of different people between those years made claims of being the first one to offer Hamburg steak on a bun.

Charlie Nagreen, claimed that in 1885 he flattened a piece of Hamburg steak and put it between two pieces of bread while working at the Outagamie County Fair.

Fletcher Davis also known as ‘Old Dave’ claimed that he put ground beef between two pieces of Texas Toast so that a busy customer could eat while on the move.

However it really got started, on July 5th 1896, it was well enough established to earn a mention in the Chicago Daily Tribune, ‘Hamburger steak sandwich for 5 cents’

Between 1926 and 1948, the popularity of the hamburger exploded in the USA, becoming particularly well liked in the Western states.

It wasn’t until the middle of the twentieth century though that it truly became a global phenomenon. It arrived in the UK in 1954, and by 1970 was being served in a thousand restaurants in 23 different countries.
